
Tomato and Egg Stir-fry Noodles

Tomato and scrambled eggs are one of the most famous dishes in China, and they can pair perfectly with almost any staple food. It is easy to make and also very nutritious. When paired with noodles, it will surely whet your appetite.
Ingredients
- cut scallion, tofu, and cilantro

- noodles
Procedures
- Dice 4-5 medium-sized tomatoes into medium chunks. Chop 1 stalk of scallion into medium chunks.
- Crack and whisk 4-5 eggs with 1/2 teaspoons of salt.
- Heat 5-6 tablespoons of oil in a large frying pan or a wok. Fry the egg until both sides become golden brown. Cut the egg into medium chunks using a spatula or a spoon.
- Add the chopped scallion inside and cook it for 1 minute. Then add all the chopped tomatoes and 1 1/2 teaspoon of salt and mix everything well. Cook for 1-2 minutes.
- Add 4-5 tablespoons of water and bring everything up to boil. Then put on the lid and boil it for 3-4 minutes.
- Take off the lid, and add 1 teaspoon of msg (optional). Cook for another 1-2 minutes.
- Take everything out and serve with freshly cooked noodles.
