
Garlic-Flavored Pork Belly

This is a very famous Northeastern Chinese dish, which perfectly captures the hospitality and enthusiasm of the people from the region. The aromatic garlic beautifully balances the richness of the pork belly, eliminating any greasiness.
Ingredients
- One piece of pork belly with skin
- Spring onion (scallion)
- Ginger
- Garlic
- Salt
- Chinese black vinegar (Chinkiang vinegar)
- Soy sauce
- Chili oil
- Sesame oil
Procedures
- If the pork belly has hair on the skin, use a torch to burn it off, then wash the pork belly clean.
- In a pot, add water and put in the pork belly. Bring the water to a boil and continue boiling the pork for 5 minutes.
- Remove the cooked pork belly from the pot and cool it down in cold water.
- Cut one spring onion into large pieces and slice the ginger.
- In the same pot, add fresh water along with the pork belly, spring onion, and ginger. Bring to a boil over high heat, then cover the pot and simmer on low heat for 40 minutes.
- Prepare the dipping sauce: Chop 5-6 cloves of garlic and mix with 2 teaspoons of salt, 2 tablespoons of Chinese black vinegar, 2 teaspoons of soy sauce, 1 teaspoon of chili oil, and 1 teaspoon of sesame oil.
- Take out the simmered pork belly and slice it into thin pieces. Serve on a plate with the dipping sauce.
