
NorthEastern Cold Noodles

When you have no appetite, try this noodle dish. It's easy to make, but it's rich in flavor.
Ingredients
- Coriander (Cilantro)
- Cucumber
- Chili powder
- Ground cumin
- Sesame seeds
- Sesame paste
- Peanut butter
- Soy sauce
- Salt
- Sugar
Procedures
- Finely chop a small bunch of coriander, 3 garlic cloves, and 4 spring onions.
- Cut a cucumber into thin strips (julienne).
- Mix the chopped vegetables with 1 tablespoon of chili powder, 1 tablespoon of ground cumin, and 1 teaspoon of sesame seeds.
- Heat 2-3 tablespoons of oil until hot and then pour it over the mixture of spices, stirring well.
- In a separate bowl, combine 3 tablespoons of sesame paste (tahini), 3 tablespoons of peanut butter, 4 tablespoons of water, 3 tablespoons of vinegar, 2 tablespoons of soy sauce, 1 teaspoon of sugar, and 2 teaspoons of salt. Mix everything until well combined.
- Mix the sauce with the spiced vegetables and cooked noodles until well coated. Serve the cold noodles salad on a plate.
