
Oil-Braised Jumbo Shrimp

This Oil-Braised Jumbo Shrimp is a very famous Chinese dish, typically served to entertain important guests. The combination of succulent shrimp with perfect seasoning is sure to delight and surprise your family.
Ingredients
- Jumbo shrimp with shells
- Spring onions (scallions)
- Ginger
- Cooking wine
- Salt
- Sugar
Procedures
- Trim the legs and heads of 15-20 jumbo shrimp with shells.
- Cut two spring onions into chunks and slice a piece of ginger.
- Heat oil in a pan and stir-fry the spring onions and ginger. Once they turn golden brown, remove the spring onions and ginger and set them aside. Keep the oil in the pan.
- Pour the oil used to fry the spring onions and ginger back into the pan and heat it over high heat. Add the prepared jumbo shrimp and pan-fry them for two minutes on each side.
- Add 2 tablespoons of cooking wine, and once the alcohol evaporates, add water to the pan. The water should be about halfway up the shrimp.
- Add 2 tablespoons of salt and 2 tablespoons of sugar. Cover the pan with a lid and simmer for 5 minutes.
- Remove the lid and transfer the jumbo shrimp to a serving plate.
- Use a filter to remove and discard the spices from the pan. Bring the liquid to a boil over high heat until it thickens.
- Add 1 tablespoon of spring onion and ginger oil to the pan, mix well, and pour it over the jumbo shrimp.
