Oil-Braised Jumbo Shrimp

This Oil-Braised Jumbo Shrimp is a very famous Chinese dish, typically served to entertain important guests. The combination of succulent shrimp with perfect seasoning is sure to delight and surprise your family.

Ingredients

  • Jumbo shrimp with shells
  • Spring onions (scallions)
  • Ginger
  • Cooking wine
  • Salt
  • Sugar

Procedures

  1. Trim the legs and heads of 15-20 jumbo shrimp with shells.
  2. Cut two spring onions into chunks and slice a piece of ginger.
  3. Heat oil in a pan and stir-fry the spring onions and ginger. Once they turn golden brown, remove the spring onions and ginger and set them aside. Keep the oil in the pan.
  4. Pour the oil used to fry the spring onions and ginger back into the pan and heat it over high heat. Add the prepared jumbo shrimp and pan-fry them for two minutes on each side.
  5. Add 2 tablespoons of cooking wine, and once the alcohol evaporates, add water to the pan. The water should be about halfway up the shrimp.
  6. Add 2 tablespoons of salt and 2 tablespoons of sugar. Cover the pan with a lid and simmer for 5 minutes.
  7. Remove the lid and transfer the jumbo shrimp to a serving plate.
  8. Use a filter to remove and discard the spices from the pan. Bring the liquid to a boil over high heat until it thickens.
  9. Add 1 tablespoon of spring onion and ginger oil to the pan, mix well, and pour it over the jumbo shrimp.
