Dry-Fried Shrimp

If you're tired of the usual fried shrimp, try this Northeastern-style fried shrimp. The crispy outer layer and tender inside will surely make you fall in love with this dish.

Ingredients

  • Large shrimp
  • Scallions
  • Ginger
  • All-purpose flour
  • Potato starch

Procedures

  1. Chop 1 small piece of ginger and slice 1 scallion into thin strips.
  2. Mix the ginger and scallion with 1 teaspoon of salt, then squeeze out the juice. Add 2 tablespoons of water to the mixture.
  3. Thaw and clean the shrimp thoroughly, then pat them dry with kitchen paper.
  4. Combine the shrimp with the ginger-scallion mixture, 1 teaspoon of white pepper, and 1 teaspoon of salt. Marinate for 5 minutes.
  5. Prepare the batter by mixing 75g of potato starch, 75g of all-purpose flour, 25g of oil, and 125g of water in a bowl.
  6. Heat oil in a pan for deep-frying. When the oil reaches 210°C (410°F), coat the shrimp with flour, dip them into the batter, and fry until the surface becomes lightly golden.
  7. Remove the shrimp from the oil and heat the oil to 240°C (464°F) again. Refry the shrimp until the surface turns golden brown.
  8. Drain excess oil from the shrimp and serve on a plate. You can enjoy them with your favorite dipping sauce.
