Ingredients

  • Leftover rice
  • Eggs
  • Spring onions (scallions)
  • Cucumber
  • Carrot

Procedures

  1. Finely chop 2 spring onions. Cut one cucumber and half a carrot into small cubes.
  2. Mix the leftover rice with 1-2 beaten eggs.
  3. Heat oil in a wok, stir-fry the chopped spring onions until fragrant, then immediately add the rice and diced carrot. Stir-fry the rice until it becomes dry and fluffy. This should take about 3-4 minutes.
  4. Add the cucumber cubes and stir-fry for 1 minute, then add 2 tablespoons of soy sauce.
  5. Mix all the ingredients well, stir-fry for another minute, and then remove from heat and transfer to a serving plate.
