
Original Braised Beef

This beef dish doesn't have any unnecessary seasoning, allowing you to savor the original flavor of the beef.
Ingredients
- Beef brisket or stewing beef
- Potatoes
- Dried tangerine peel (chenpi)
- Star anise
- Sichuan peppercorns
- Cumin seeds
- Spring onions (scallions)
- Ginger
- Cilantro (coriander)
- Salt
- White pepper powder
Procedures
- Soak 2-3 pounds of beef brisket in water for an hour.
- Fill a pot with cold water and add the beef brisket. Bring it to a boil over high heat and continue boiling for 10 minutes.
- Cut 1-2 potatoes into large chunks, slice two spring onions into large pieces, and slice a piece of ginger. Chop 2-3 sprigs of cilantro into small pieces.
- Prepare 1-2 pieces of dried tangerine peel, 2-3 pieces of star anise, one teaspoon of Sichuan peppercorns, and one teaspoon of cumin seeds. Rinse all the spices and place them in a spice filter.
- Cut the boiled beef into chunks.
- Heat oil in a wok, stir-fry the spring onions and ginger until fragrant, then add the beef and potatoes. Stir-fry for two minutes.
- Add enough water to cover all the ingredients in the wok, put in the spice filter, and add 3 teaspoons of salt. Bring it to a boil over high heat for 3 minutes.
- Taste the soup in the pot, and add salt to your liking. Remove the spice filter.
- Transfer all the ingredients from the wok to a pressure cooker and stew for 30 minutes.
- Bring all the ingredients back to the wok, add 2 teaspoons of white pepper powder, and bring to a boil.
- Serve on a plate, and sprinkle cilantro on top before serving.
