Hand-pulled Pork Ribs

Ingredients

  • Pork spare ribs
  • scallion
  • ginger
  • Sichuan peppercorn
  • star anise
  • dried bay leaves
  • Chinese cooking wine
  • soy sauce
  • dark soy sauce
  • salt

Procedures

  1. Soak the 3.3 spare ribs in water for 1 hour to remove blood.
  2. Cut 2 stalks of scallion and slice 1 medium piece of ginger.
  3. Heat 7-8 tablespoons of oil in a large wok. Add the scallion chunks, ginger slices, 3 star anises, 5-6 bay leaves, and 1 tablespoon of Sichuan peppercorn. Cook until you smell the fragrance.
  4. Add the spare ribs inside and cook until the ribs become golden brown.
  5. Add 2 tablespoons of Chinese cooking wine, 2 tablespoons of soy sauce, and 1 tablespoon of dark soy sauce. Mix everything well and cook for 2 minutes.
  6. Add water until everything is immersed in the liquid. Bring everything to a boil and add 2 tablespoons of salt.
  7. Put on the lid and turn down the heat. Let it simmer for 70-80 minutes.
  8. Turn off the heat and let the rib rest for 10 minutes.
  9. Take out the rib and start plating.
