Ingredients

  • Chicken drumsticks
  • Spring onions (scallions)
  • Ginger
  • Garlic
  • Star anise
  • Sichuan peppercorns
  • Soy sauce

Procedures

  1. Cut two spring onions into large pieces and slice a small piece of ginger. Rinse one star anise and one teaspoon of Sichuan peppercorns.
  2. Remove bones from 3-4 chicken drumsticks
  3. Heat oil in a pan, add the spring onion pieces, ginger slices, star anise, and Sichuan peppercorns. Stir-fry until the spices release their aroma.
  4. Place the chicken drumsticks in the pan with the skin side down. Fry for four minutes.
  5. Add 2 teaspoons of salt, then flip the chicken drumsticks and fry for another three minutes.
  6. Pour in 3 tablespoons of soy sauce and add water until it reaches the same level as the chicken drumsticks. Bring it to a boil.
  7. Cover the pan with a lid, reduce the heat, and simmer for 20 minutes.
  8. Remove the lid and boil the sauce over high heat until it thickens.
  9. Remove from heat and transfer the chicken drumsticks to a serving plate.
