Scallion Braised Tofu

This is a delicious dish that everyone can easily make. When you have no appetite or when your stomach is not feeling well, a bowl of warm and nutritious steamed egg custard will definitely make you feel better.

Ingredients

  • Tofu
  • Spring onions (scallions)
  • Sichuan peppercorns
  • Ginger
  • Vegetable broth (or any type of high-quality broth)

Procedures

  1. Cut a block of tofu into thick strips. Cut 6 spring onions into large pieces and slice a small piece of ginger into ginger slices.
  2. Bring a pot of water to a boil, add the tofu, cover the pot, and boil for 5 minutes.
  3. Heat some oil in a separate pan, then add the spring onion pieces. Once the outer part of the spring onions turns golden brown, remove them from the oil.
  4. In the same pan, add 1 teaspoon of Sichuan peppercorns and the ginger slices. Once the Sichuan peppercorns turn dark brown, remove the spices from the oil.
  5. In the same pan, add the previously stir-fried spring onions, 3 tablespoons of soy sauce, and 7-9 tablespoons of vegetable broth.
  6. Place the boiled tofu into the pan, then add 1 teaspoon of sugar. Bring it to a boil, cover the pan, and cook for 5 minutes.
  7. Mix 2 teaspoons of potato starch (or cornstarch) with 2 tablespoons of water until smooth, then pour the mixture into the pan and stir well. Cook until the sauce thickens.
  8. Serve the Scallion Braised Tofu on a plate.
