
Spinach and Tofu Soup

This Spinach and Tofu Soup is a simple yet nutritious and healthy dish. It is not only delicious but also comforting, making it perfect for enjoying during cold weather.
Ingredients
- Spinach
- Tofu
- Spring onions (scallions)
- Salt
- Chinese cooking wine
Procedures
- Finely chop one spring onion and cut a bunch of spinach into sections.
- Cut a block of tofu into small cubes.
- Heat oil in a pot, sprinkle some salt in the oil, then add the cubed tofu to pan-fry.
- Add the chopped spring onions and pan-fry the tofu until both sides turn golden brown.
- Pour in one tablespoon of Chinese cooking wine. Once the alcohol evaporates, add enough water to cover the tofu and bring it to a boil for two minutes.
- Add 2 teaspoons of salt and 2 teaspoons of white pepper powder, continue boiling for three minutes.
- Mix one teaspoon of cornstarch with one tablespoon of water until smooth, then pour it into the pot along with the chopped spinach.
- Beat an egg and slowly pour it into the pot while stirring.
- Add the chopped spring onions, then remove from heat and transfer to a serving dish.
