This Spinach and Tofu Soup is a simple yet nutritious and healthy dish. It is not only delicious but also comforting, making it perfect for enjoying during cold weather.

Ingredients

  • Spinach
  • Tofu
  • Spring onions (scallions)
  • Salt
  • Chinese cooking wine

Procedures

  1. Finely chop one spring onion and cut a bunch of spinach into sections.
  2. Cut a block of tofu into small cubes.
  3. Heat oil in a pot, sprinkle some salt in the oil, then add the cubed tofu to pan-fry.
  4. Add the chopped spring onions and pan-fry the tofu until both sides turn golden brown.
  5. Pour in one tablespoon of Chinese cooking wine. Once the alcohol evaporates, add enough water to cover the tofu and bring it to a boil for two minutes.
  6. Add 2 teaspoons of salt and 2 teaspoons of white pepper powder, continue boiling for three minutes.
  7. Mix one teaspoon of cornstarch with one tablespoon of water until smooth, then pour it into the pot along with the chopped spinach.
  8. Beat an egg and slowly pour it into the pot while stirring.
  9. Add the chopped spring onions, then remove from heat and transfer to a serving dish.
