Tired of the regular mashed potatoes? Give this Northeastern Mashed Potatoes a try, and it will surely surprise you and make you fall in love with this dish.

Ingredients

  • Potatoes
  • Shiitake mushrooms
  • Spring onions (scallions)
  • Garlic
  • Cilantro (coriander)
  • Soybean paste (yellow bean paste)
  • Cornstarch
  • White pepper powder
  • Salt

Procedures

  1. Cut 3-4 potatoes into thick slices and steam them for 10 minutes.
  2. Dice 3-4 shiitake mushrooms, half a green bell pepper, and one spring onion. Finely chop a small piece of ginger.
  3. Finely chop 3-4 spring onions, 6 cloves of garlic, and 4-5 sprigs of cilantro and set them aside.
  4. Heat oil in a wok, stir-fry the chopped spring onions until fragrant, then add 4 tablespoons of soybean paste and stir-fry until aromatic.
  5. Add the diced shiitake mushrooms and green bell pepper, stir-fry for 30 seconds, then add 6-7 tablespoons of water and bring it to a boil.
  6. Mix one teaspoon of cornstarch with one tablespoon of water until smooth, then pour it into the wok. Stir-fry until the sauce thickens.
  7. Mash the steamed potatoes and add 1 teaspoon of white pepper powder and 1 teaspoon of salt. Mix well.
  8. Serve the mashed potatoes on a plate, pour the sauce over the mashed potatoes. Finally, sprinkle the chopped spring onions, garlic, and cilantro on top of the mashed potatoes.
