
Northeastern Mashed Potatoes

Tired of the regular mashed potatoes? Give this Northeastern Mashed Potatoes a try, and it will surely surprise you and make you fall in love with this dish.
Ingredients
- Potatoes
- Shiitake mushrooms
- Spring onions (scallions)
- Garlic
- Cilantro (coriander)
- Soybean paste (yellow bean paste)
- Cornstarch
- White pepper powder
- Salt
Procedures
- Cut 3-4 potatoes into thick slices and steam them for 10 minutes.
- Dice 3-4 shiitake mushrooms, half a green bell pepper, and one spring onion. Finely chop a small piece of ginger.
- Finely chop 3-4 spring onions, 6 cloves of garlic, and 4-5 sprigs of cilantro and set them aside.
- Heat oil in a wok, stir-fry the chopped spring onions until fragrant, then add 4 tablespoons of soybean paste and stir-fry until aromatic.
- Add the diced shiitake mushrooms and green bell pepper, stir-fry for 30 seconds, then add 6-7 tablespoons of water and bring it to a boil.
- Mix one teaspoon of cornstarch with one tablespoon of water until smooth, then pour it into the wok. Stir-fry until the sauce thickens.
- Mash the steamed potatoes and add 1 teaspoon of white pepper powder and 1 teaspoon of salt. Mix well.
- Serve the mashed potatoes on a plate, pour the sauce over the mashed potatoes. Finally, sprinkle the chopped spring onions, garlic, and cilantro on top of the mashed potatoes.
