Wood Ear Stir-fry with Pork

Ingredients

  • Pork
  • White pepper powder
  • Cucumber
  • Carrot
  • Wood ear mushrooms
  • Spring onion
  • Ginger
  • Chinese cooking wine

Procedures

  1. Slice 1 pound of pork into thin pieces and beat four eggs. Add 1 teaspoon of white pepper powder and 2 tablespoons of water to the beaten eggs and mix well.
  2. Slice half a cucumber and half a carrot. Cut wood ear mushrooms into small pieces.
  3. Finely chop one spring onion and a small piece of ginger.
  4. Heat oil in a wok and add the beaten egg mixture. Fry the eggs until both sides turn golden, then chop them into small pieces and remove from the wok.
  5. Heat oil again in the wok, then add the pork slices. Stir-fry until the pork changes color, then add 2 tablespoons of Chinese cooking wine and stir-fry for 30 seconds before adding the chopped spring onion and ginger.
  6. Add cucumber and carrot slices to the wok and stir-fry for 1 minute. Then add the previously fried eggs along with 2 teaspoons of salt and continue to stir-fry for 1 more minute.
  7. Finally, add 1 tablespoon of vinegar to the wok, stir well, and then remove the dish from the wok and transfer it to a serving plate.
