This is a very famous dish that pairs well with rice. It transforms simple eggplant into a stunning and delightful delicacy.

Ingredients

  • eggplant
  • green pepper
  • scallion
  • garlic
  • ginger
  • Chinese cooking wine
  • soy sauce
  • corn starch

Procedures

  1. Cut 3 eggplants into medium chunks. Cut 1 green pepper into medium-small chunks.
  2. Dice 1 stalk of scallion, 1 tiny piece of ginger, and 1-3 cloves of garlic.
  3. Use a large pot or a wok, heat a decent amount of oil to 428 F (220C), and fry the eggplant. Take the eggplant out when they become light golden brown.
  4. eggplants, add the green pepper and fry them for several seconds.
  5. In a large frying pan or a wok, heat 3-4 tablespoons of oil. Add the scallion, ginger, and garlic to fry them.
  6. When you smell the fragrance, add 2 tablespoons of Chinese cooking wine and 2 tablespoons of soy sauce.
  7. When the alcohol evaporates, add the fried eggplants and green pepper and cook for 2-3 minutes.
  8. Add 5-6 tablespoons of water, 1 teaspoon of salt, 1 tablespoon of sugar, and 1 teaspoon of msg (optional).
  9. In a small bowl, mix 1 teaspoon of cornstarch and 2-3 teaspoons of water. Add the starch water to the pan and mix everything well.
  10. Take everything out and start plating.
